C&D offers distinguished grand cru cognacs to meet the exacting standards of our customers while respecting cognac itself.
The origin of cognac
Cognac can only be produced from grapes grown in six legally recognized "crues" or regions in the Cognac region of France.
Distillation
The wine is distilled twice using a complex process unique to cognac. This begins at the end of the harvest, once all the grape juice has fermented and turned into wine, and ends on March 31, in accordance with the law.
Before aging
The distillate is separated into three parts: the heads, the heart, and the tails. Only the clear, pure liquid from the heart is kept. This distilled eau-de-vie is now ready for the aging process that produces cognac.
